Spinach Manicotti:
Filling:
1 large carton of Cottage Cheese
1 large Onion, finely chopped
1 package Frozen spinach, thawed
Generous handful Shredded Cheese
Mix filling ingredients, stuff into uncooked manicotti shells. Line up in baking dish, top with sauce:
2 cans Tomato Sauce
1 can Tomato Paste
4 cloves Chopped Garlic
1 large Onion, finely chopped
1/4 cup Sun Dried Tomatoes
Oregano
Parsely
Salt
Sugar
Bake at 350 for about 35-45 minutes, until the pasta gets soft. Top with a generous amount of shredded cheese, brown for about 15 minutes. Meatless and tasty!
